American bison has become very popular and the demand for high-quality bison
exceeds the supply.


The American Buffalo is a bison, not a true buffalo. It’s closest relative is it’s
cousin, the European Bison. The American Buffalo belongs to the Bovine
family of mammals, which includes domestic cattle. The American Bison
Association encourages all bison producers and marketers to use the name
bison to avoid confusion with water buffalo and to help inform the American
public that bison is indeed the American Buffalo.


After near extinction of the American Bison in the 1800's, the animals are
thriving today with over a quarter million head being raised on ranches across
the United States. Demand for bison meat is at its highest levels ever. Bison
meat has many of the characteristics of good beef, but it' is richer in flavor and has a lower fat content. Less fat means bison meat has more protein per
ounce.
