Zucchini with mint; Zucchine alla menta

Ingredients

8 zucchini,4 garlic cloves,12 mint leaves,2 tablespoons white wine vinegar,Extra virgin olive oil,Salt and freshly ground pepper to taste

Directions

Rinse the zucchini, cut off the stems, and then slice into 1/4-inch thick round pieces. Slice the garlic cloves in half and chop the mint leaves.

Heat the olive oil in a pan over medium heat, add the zucchini, fry until browned evenly, and then put the zucchini in a bowl.

In the same pan, add more olive oil if necessary, lightly fry the garlic and immediately add the vinegar and mint then pour over the zucchini. Salt and pepper to taste, then gently toss and serve hot or room temperature.
