Peanut Butter Chicken

Ingredients

1 large jar peanut butter,2 heaping tsp. chopped garlic,1 1/2 cup soy sauce,3/4 cup red wine vinegar,2 cups peanut or olive oil,1 heaping Tblsp. fresh chopped ginger,1/2 Tblsp. red pepper corns, coarsley ground,4 lbs. boneless, skinless chicken breast stripsBamboo skewers, soaked in water

Directions

1. Combine all ingredients except the chicken in the food processor and process until thick and the consistency of honey. If the mixture becomes too thick, add a small amount of oil or milk.

2. Rinse and dry the chicken strips and place in a shallow pan.

3. Pour 2/3 of the mixture over the chicken and marinate for 8-12 hours. Reserve and refrigerate the 1/3 sauce for use later.

Place chicken strips on cookie sheets and bake in a 350 degree oveen for 20 minutes. The chicken is not ready to eat at this point! Thread the chicken on skewers.

Grill the chicken on an open flame for 8-10 minutes or until cooked thoroughly (165 degrees).

Use reserved peanut sauce for dipping or drizzpling over chicken.

This chicken is wonderful served as -is as an appetizer or over jasmine flavored Basmati rice for an entree.
