Quinoa Salad with Green Goddess Dressing

Ingredients

1 cup quinoa,1 cup flat-leafed parsley,1/2 cup cliantro,1/2 cup cold=pressed olive oil,1/4 cup fresh lemon juice,1 clove garlic,1/2 tsp. umeboshi plum vinegar,1 1/2 cups blanched and chopped broccoli florets,1/2 medium cucumber - peeled/seeded/diced, 1 carrot grated,1/4 cup diced red onion,1 chopped scallion

Directions

1. Rinse quinoa in cold water. Place it, and 2 cups of water in a saucepan and bring to a boil. Reduce the heat and simmer until the water is absorbed, about 20 minutes.

2. Cover and refrigerate the quinoa.

3. For the dressing, place parsley, cilantro, olive oil, lemon juice, garlic and vinegar in a blender and blend until smooth. Refirgerate the dressing immediately.

4. When ready to serve the salad place the chilled quinoa, broccoli, cucumber, carrot, onion and scallion in a large bowl. Toss with 1/2 cup dressing and serve the remainder of the dressing on the side.
