Chicken Scallopini

Ingredients
3 Tblsp. all purpose flour,1/2 tsp. salt,1/4 tsp. pepper,1 lb. boneless skinless chicken breats cut into strips,2 Tblsp. olive oil,1 small red pepper - seeded and sliced into thin strips,1 shallot - chopped,2 cloves garlic - minced,1 tsp. grated ginger,2 Tblsp. mango chutney,4 tsp. balsamic vinegar,4 tsp. currants,chives for garnish
Directions
1. Place flour, salt and pepper in resealable plastic bag.
2. Dredge half the chicken strips in the flour; shake off excess.Repeat with remaining strips
3. In a large nonsitck skillet, heat oil over medium heat. Cook check 3-4 minutes, until cooked through or to 165 degrees. Remove the chicken from skillet and keep warm.
4. Add pepper, shallot, garlic and ginger to the skillet and cook for 1/2 minutes.
5. Add chutney, vinegar and currants and stir -fry for another 2 minutes or until heated through and the mixture has slightly thickened.
6. Return the chicken to the skillet and heat mixture through.

This can be served alone or over rice or pasta.
