Red Wine Marinade

enough for a large beef roast

Ingredients

1 cup hearty red wine,1/2 cup balsamic vinegar,1 Tblsp. fresh rosemary or 1 1/2 tsp. dried,1 Tblsp. chopped fresh basil or 1 1/2 tsp. dried,2 cloves crushed garlic,1/2 tsp. salt,1/2 tsp. crushed red hot pepper flakes,1/2 cup olive oil

Directions

1. In a large bowl, wisk together wine, vinegar, rosemary, sage, basil, garlic, salt and red pepper. Gradually wisk in the oil.

2. Pour over the meat and let stand at least one hour under refrigeration.

3. Remove the meat from marindate and cook on the barbeque until thermometer stuck into the thickest part of the meat reads 160 degrees (medium-well).

Comments

Wonderful for roast beef, port or chicken.
