Da Mimmo's Tortellini Pavarotti

Ingredients

4 red bell peppers, 1 bunch fresh dill- washed and finely chopped,1 onion, diced,1 quart tomato purée,1 quart peeled tomatoes,8 oz. tomato paste,1 lb. fresh meat tortellini,1 cup grated parmigiano cheese,1/2 lb. butter,4 oz. virgin olive oil,black pepper and salt,

Directions

- Broil 4 red bell peppers at 350° for 5 minutes, turning every minute. Let pepper cool to touch, peel off skin, and dice.

- In a gallon pot with a heavy bottom, melt butter and olive oil, sauté onions to golden color.
- Add roasted peppers for 5 minutes. Add tomato paste, peeled tomatoes, tomato purée and dill, stirring every five minutes.
- Add salt and pepper to taste. Cover and simmer on a small flame for 30 minutes.
- Let sauce cool and purée in a food processor or blender.

- Boil tortellini for 6 minutes.
- Drain, return to pot.
- Add three ladles of sauce and 1/2 cup parmigiano cheese and stir.
- serve on a plate, ladle over sauce and finish with parmigiano cheese and a sprinkle of black pepper.
